When the cold weather arrives the food becomes much richer…
Soups of cereals and beans, of chestnuts and dried
broad beans, chick peas with abundant olive oil and parsley.
First courses: “’nudundari al ragù”,
dumplings in meat and tomato sauce, “gnocchi
alla Sorrentina” tiny potato dumplings in tomato sauce, “crespolini”
stuffed pancakes, “cannelloni”
pasta filled with fresh cheese, pork salami and vegetables….
Second courses: Meat “alla pizzaiola”
in a sauce of “piennolo tomatoes”, garlic and marjoram, stuffed
spleen, ox-tail Genoa-style… and fish, salt
cod and potatoes, mackerel with onion and vinegar sauce, stuffed calamari..
and fried eel, that is always on the local menu on Christmas Eve…
The rustic “caponata” a salad
of rusks from Agerola with aubergines under oil, olives and capers and
salted anchovies, or the fragrant slices of toasted
bread with “piennolo” tomatoes, that remind us of Summer.
Tuna fillets and salted
anchovies kept in typical pottery jars. The amber liquid that collects
at the bottom is filtered and mixed with walnuts, pine nuts, and parsley
and used as a condiment for Vermicelli with anchovy
sauce, another traditional dish eaten on Christmas Eve…
The cakes and desserts
also follow the seasons: chiacchiere
(fried biscuits), fritters, and sanguinaccio
( chocolate blood) for Carnival; zeppole
( doughnuts) on St. Giuseppe; pastiere
( a tart made with buckwheat and ricotta) at Easter; fresh fruit
tarts in summer, and at Christmas susamielli,
esse di miele, rococo, mostaccioli (spicy cakes and biscuits),
chocolate covered figs, lemon creamy nougat,
struffoli ( little pastry balls covered with honey and hundred
and thousands…
All through the year you can taste the torta
Caprese (Capri cake), cassate and
pasticciotti, the specialities of Atrani, the sfogliatelle S.Rosa,
and to end on a sweet note, sorbets,
cakes, cream cakes and delizie ( delicious
lemon cakes), all of them lemon flavoured, of course!
Before we take our leave we recommend the ancient liqueurs: myrtle,
walnut, laurel, strawberry, fennel, concierto and the celebrated
limoncello… maybe you would
